There are many ways it could be done. We could ask another signee to grayshirt or this DT recruit to grayshirt. Or we could find a reason to kick a current scholarship player off the team "for breaking team rules" or some bogus reason like that. Nick Saban does it quite frequently at Bama

Outside the Lines did a good show on this exact topic. Les Miles is also really good at over signing and then getting rid of scholarship players that were failing to make the 2 deep after a few years. One QB they had just received a letter saying basically he no longer had a scholarship. Then they make up about whatever they want. Attitude problems or whatever suites their fancy. I believe the SEC is the worst for over signing. Since they SEC is a coveted conference to play in, scholarship players that don't pan out are taking spots that could be used for all the new highly touted HS players that want to be on the team.
