If you could choose 1 offense and 1 defense for the Pokes,

what would they be?

For me, it would be Paul Roach's triple option from the wishbone formation for offense, and either a 3-3-5 defense (doesn't rely on size, but speed) or the 3-4 defense (bringing pressure from all over the place and can easily convert to 4-3 defense).
 
If I got to coach at Wyo, I would bring almost exactly what I do now.
Offense: My own version/formations of the Pistol. 55% rush, 45% pass. I think with the Backs we have and a mobile Brett we could easily average almost 250 yards rushing (even with our offensive line). And in rushing so well I think our passing attack, with the talent at OB and WR, we would have some HUGE play making capabilities.

Denfense: 4-4 or 5-3. Yes, our coverage is horrid right now, so why add more kids back in coverage and confuse them with even more assignments and have several blown coverage's and give up more big plays every game? So, I would play straight up man coverage with what I have already in the the backfield. I would then use all I could to manhandle the opponents Offense rushing and "in theory" hope to either get to or disrupt their QB enough that he make bad passes. When you have 5, 6 or 7 defenders rushing you, it will take a toll. The line will get tired, The QB will not only be tired from running all night, but should be frustrated and our coverage good enough to protect any passes that could be completed.
My team just played the best offense in Kansas last week. Great rushing team and the best passing team in the state. We typically run a 4-4 and we went 5-3 and blitzed on every other first down and EVERY third down. Their QB who all season has completed 65% passing and averaged 225 yards through the air, went 11-32-99-0-1. We decimated their running game as well. It can work in Laramie.

I would be behind this move 100%. Really like the idea of a 4-4. I wouldn't mind having a 4-2-5 either, I just don't know if we have the skill to pull that off.
 
I'm a fan of the spread, but you need to have multiple sets to utilize it correctly. You also HAVE to have a pound-it-down-their-throats running formation or two, be it the pistol or the Maryland I. On defense I'm a big fan of the 4-2-5, but you need a pretty solid D line to make it work and a deep secondary.

get a couple of pigs at a NG and DT and run 3-4. Nothing better. Steelers have been using it for years. Don't even need great LB's because every LB that has left pittsburgh has sucked on other teams. They come back and are dominating again. I believe Larry Foote fits in this category.
 
Offense: Spread as a base with more power sets and fewer zone-read play calls.

Defense: Wyoming needs to be running a base 3-4 period. We have never recruited the size, speed and depth on the D-line to run the 4-3.

You MUST have a Fred givens type at NG to take a double team in a 3-4. Olive could be that guy if we ever switched
