So if Utah State only wins by 1, they will be only given 3 points to their total? It should be something like worst spread prediction of the current entries multiplied by 2...

That's how I've generally done it in the past. It certainly isn't bad when it's a close game, but when it's a 20 or 30 point spread, it stings. Your idea is a good one as well.
